Inulin is a mixture of oligomers and polymers of β-(2-1)-fructose derived from natural sources including vegetables, fruits, Jerusalem Artichoke Tuber(Helianthus tuberosus L.) and Chicory roots.
Inulin is classified as “non-digestible” and low-caloric carbohydrate used in nutrition as a source of dietary fibers. It stimulates the growth of healthy intestinal bacteria which support good colon and intestinal health. Research has shown that inulin-type fructans and corresponding fermentation products reduce the risks of colon cancer. It could be used to replace fat and sugars for a wide range of applications in foods. Inulin dose not affect blood sugar levels, its taste is comparable to sugar (lower sweetness) and it would be an ideal ingredient as a sugar replacement for certain food preparations.
